For the first time in well over a year, I present: A FOODBLOG. I tend to make vegetarian lunches. I've still been doing this, but usually can't be arsed to take photos and post them. Tonight I felt like doing it, considering how much time I expended in the kitchen.
Here we have a garden vegetable soup featuring spinach, diced tomato, zucchini, and some other soup staples in a flavorful vegetable stock. I made Gin taste it (she's not a soup person) and she pronounced it good.
And here's a pan-roasted vegetable melange over garlic & olive oil couscous. I cubed a yukon potato, pan-fried it in olive oil, added the asparagus, and set those aside. After that I browned red onion with an herb mix and added some eggplant that I'd chopped into matchsticks.
